Our sourdough starters are maintained in computer-controlled fermentation tanks that stir, heat, or cool the starter as needed, ensuring consistent quality and flavour across every batch. Several sourdough starters are perpetually fermenting in large insulated fermentation vats, stirred each hour and replenished daily. We produce both 100% sourdough loaves and breads that incorporate sourdough into classic blends. Our mixer tanks enable us to produce an additional 2,000 sourdough loaves per day, supporting a variety of foodservice professionals. Within our sourdough range, the White Sourdough Trad Shape Bloomer delivers naturally fermented flavour, a firm crust, and a chewy texture, making it ideal for sandwiches, gourmet dishes, or premium menu options. <\/p>\n<p>Other formats include specialty loaves suitable for slicing, menu variety, and creative plating, as well as breads combining sourdough with traditional recipes for versatility and enhanced taste.
