The Worlds Only Working Graduation Towers: Blackthorn Salt Reveals a Majestic New Sister Tower


We are so pleased to share the completion of our new (and not at all “baby”) Sister Tower — a hugely exciting milestone for us to have achieved after just 6 years on.

This Sister Tower stands a whopping 12m tall and some 28m long – 4m higher than our first Thorn Tower – overlooking the sea and is a direct result of the belief and passion that our customers have in the unique qualities of Blackthorn.

Our salt is still the only salt to be made using the incredible Thorn Tower method in the world today, and the first ones in history to have used seawater, making it an especially distinctive and sustainable salt.

Reviving and thriving: 300-year-old salt making

Blackthorn Salt, on the West Coast of Scotland began with a shared passion between founders Gregorie and Whirly Marshall — combining Gregorie’s deep-rooted knowledge of salt and architecture with Whirly’s passion for sustainability, history and tradition.

Although Blackthorn officially began trading in 2020, its foundations were laid over 20 years and its location firmly rooted on an ancient Ayrshire salt-making site. Drawing on experience from the family’s 150-year-old salt-importing business, the aim was simple: to create a salt they could be truly proud of, using methods that work in harmony with the Scottish climate.

At the heart of Blackthorn is the revival of a 300-year-old Graduation Thorn Tower method. Atlantic seawater is slowly trickled through the spiny walls of this incredible structure filled with blackthorn branches, allowing wind and time to naturally concentrate the brine before it is gently harvested by hand in the Pan House.

However, we understand that if it didn’t taste great, the process would be unimportant. With that in mind, we’ve focused on creating a salt that goes beyond the expected – Blackthorn is deliberate in capturing each of the 5 basic tastes within each crystal: it has calcium for sweetness, magnesium and potassium for sourness and bitterness and even umami notes from the blackthorn bark itself covering savoury aspects as well as the saltiness in every carefully gathered flake.

An Award-Winning Taste Like No Other

We are exceptionally proud that Blackthorn has been awarded a Golden Fork for Scotland, as well as three Great Taste stars for its quality and flavour.

The Great Taste Awards are the world’s largest and most trusted food and drink accreditation scheme. Every product is blind-tasted, and fewer than 2% of entries achieve the coveted 3-star rating — the highest accolade a food and drink producer can receive. With over 13,000 entries each year from across the UK and beyond, it is an honour we are incredibly proud of.

As we look ahead, we are beyond thrilled to be embarking on the next era with the Sibling Towers sustainably working side by side to ensure we can meet the needs of our discerning customers.
